Tasty Tuesday: Adobo Chicken Legs

So I'm trying to take a healthier approach to my cooking. I found a recipe for adobo chicken on skinny tatse but was missing some ingredients. So I went crazy and made my own version:
It was amazeballs!
Ingredients:
6 chicken drumsticks, skin removed
1/3 c. teriyaki sauce
4 chiplotle chilis with adobo (roughly chopped)
1/4 c. white cooking wine
1 small head of garlic (crushed)
fresh ground pepper
4 bay leaves

Directions:
Marinate chicken in wine, teriyaki sauce, garlic, chiplotle, and pepper, for at least an hour (overnight is ideal). Add chicken, 1/2 cup water, bay leaves and marinade into a pot and bring to a boil over medium heat. Cover, reduce heat to medium low and cook until the meat is tender, about 30 minutes. Remove the cover and cook an additional 15 minutes, until the sauce reduces. Discard bay leaves and serve. I chose cauliflower and green beans to go with ours, but you can serve over some rice too. It was absolutely delicious.

Shameless Derby Plug!

Here I am in my hippie, crunchy, derby mama glory :)
So even though I barely have time to write posts here, I decided to make a blog dedicated solely to my newest obsession, DERBY! Roller derby is an amazing sport and I'm having such a blast. Tasty Tuesday: Corn Dip


This is seriously the best dip ever! I literally eat this with a spoon!

Ingredients:
1 bag of frozen corn, or 2 cans (drained)
1 block of cream cheese (cut in chunks)
1 stick of butter (cut in chunks)
About 1/3 of a jar of jalapenos plus a little juice

Directions:
Preheat oven to 350. Take cheese and butter and stick in microwave for about 2-3 minutes, just to get it kinda creamy. Add it to oven safe bowl with corn and jalapenos and give it a good mix with a spoon. Stick it in the oven for about 30 min, stirring every 10, till bubbly. Break out your favorite chips, or a spoon (lol) and enjoy.

I Suck at New Year's Resolutions

My resolution to blog more has obviously not been kept up, lol. 4 months into it and I suck! I'm sure my followers are wondering if I fell off the edge of the planet or something. Well, here I is! Been pretty busy with my new part time job as a firefighter for West Union, full time mommy, and full time roller derby girl! Whew! I think I sometimes have to remind myself to breathe. I do plan to get back on it and start blogging more, including a separate blog solely for the fun that becoming a derby girl entails. Got Easter this Sunday and I made a couple little goodies for my dude that I will show off once I'm done. I also got an ever growing list of goodies to make for his first birthday (first birthday, OMG!) which is less than 4 months away (cue uncontrollable sobbing). Keep on the look out tomorrow for a post with either a craft of recipe. For now, let me show off my little dude in a current picture :)
